Ingredients

Ground Lamb:
1 pound ground Aussie ground lamb
Vegetable oil
¼ cup minced onion
2 cloves garlic, minced
1 tablespoon curry powder
½ teaspoon ground cumin
½ teaspoon turmeric
Salt
8 ounces shredded queso fresco

Cilantro:
4-inch crispy tortillas, broken

Garnish:
Heirloom tomatoes, variety of colors, diced
Cilantro

Directions

1. In a sauté pan, warm vegetable oil and sauté the onion and garlic until translucent.

2. Add the meat and spices and cook until simmering. Season with salt.

3. For each serving, toss 4 ounces lamb mixture with 2 ounces queso, some cilantro, and some tortilla shards. Garnish with tomatoes and cilantro.
