Marinade
1 ½ tsp anise seed, crushed
½ cup olive oil
3 tbsp freshly squeezed orange juice
3 cloves garlic, minced
1 tbsp red onion, finely chopped
1 tsp sea salt
½ tsp freshly ground black pepper

1 head fresh fennel, thinly sliced
1 orange, peeled, seeded and sectioned
6 fresh mint leaves
1 lemon, juice only
2 tbsp. good quality olive oil
